Sweet Potato Brownies

My sister is famous in Nymboida for her beetroot chocolate cake, so we thought we would try making another recipe with a root vegetable. This recipe is rich and moist and relatively easy to make. During isolation I have found a lot more time to bake and as we have been having dessert every night we have been experimenting a little.

Sweet potato brownies INGREDIENTS

1 tsp cream of tartar 2 tsp bi-carb soda. 1/2 a tsp of salt. 8 Tbs raw cacao. 2/3 cup of flour. 1 cup honey. 1 egg. 1/2 cup of cacao butter 1 cup of butter 2 large sweet potatoes.



METHOD

  1. Preheat oven to 180 degrees Celsius.

  2. Peel sweet potatoes and boil until soft.

  3. Melt honey, butter and cacao butter in a saucepan.

  4. Mash sweet potato and combine with honey mixture.

  5. In a separate bowl, sift together flour, cacao, salt, bi-carb, and cream of tartar.

  6. Combine wet and dry ingredients, adding one egg.

  7. Stir well.

  8. Pour batter (it will be thick) into tray. Bake for 20-25 minutes, until a skewer inserted comes out clean. It will be soft.
